Persian Chicken with Pomegranate and Walnuts
Jared made this and it had really fantastic flavor. It's supposed to be served with saffron rice, but since saffron is $19 a bottle, he seasoned it without it. This gets a 7.5 and it's a Fine Cooking recipe.
- 1-1/2 Tbs. granulated sugar
- 1 tsp. ground cinnamon
- 1 tsp. ground turmeric
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. ground allspice
- Kosher salt and freshly ground black pepper
- 2-1/2 lb. boneless skinless chicken thighs, halved
- 2 oz. (4 Tbs.) unsalted butter
- 2 large yellow onions, thinly sliced (about 4 cups)
- 2 cups toasted walnut pieces, very finely chopped or ground
- 1/4 cup pomegranate molasses
- Fresh pomegranate seeds for garnish
