Healthy Applesauce Oat Muffins

I really liked these because they're healthier and tasty. They get a 7 and came from melskitchencafe.com. They're also versatile, so you could add different spices and fruits to them.  1   cup   ( 100   g )   old-fashioned rolled oats  1   cup   ( 227   g )   unsweetened applesauce ½   cup   milk 1   large egg 1   teaspoon   vanilla ¼   cup   ( 57   g )   butter or coconut oil ,  melted I used butter ⅓   cup   ( 71   g )   granulated sugar or honey ¾   cup   ( 107   g )   whole wheat flour 1   teaspoon   baking powder ½   teaspoon   baking soda 1   teaspoon   cinnamon ¼   teaspoon   salt 1/4 tsp nutmeg ½   cup   ( 70   g )   dried cranberries or raisins (optional) I left these out https://www.melskitchencafe.com/healthy-oats-and-applesauce-muffins/  

Lemon Blueberry Muffins

  So, this is a recipe courtesy of Me. You’re welcome.  Lemon Blueberry Muffins 1/3 cup olive oil 1/3 cup sugar (I cut this down to 2 Tbs.) 1/3 cup fresh squeezed lemon and orange juice combined (I used clementines) 1/3 cup buttermilk zest of 1 lemon 1 egg 1/2 tsp, salt 1 tsp. baking soda 2 tsp. baking powder 1 tsp. vanilla 2 cups flour (I use 1 1/4 almond flour and 1 cup white flour) 1 cup cranberries (I use 1 1/2 cups in mine) Almond streusel, optional So, you put the wet ingredients together and add dry. Right before it is all stirred together *use a wooden spoon, btw* I add the zest and berries so they distribute evenly right as the batter is done mixing. Don’t overmix. Bake at 400 for 12-20 minutes. This makes 12 small or 6 large muffins, and I often use the almond streusel from the blueberry muffin recipe I blogged about a year ago to put on top (and even the bottom of the muffin as well).

Applesauce Carrot Muffins

  These were good and my kids really liked them. These could be made healthier (based on her original recipe), but I played it safe this time. Anyway, they came from melskitchencafe.com, and they get a 7.  1 ½   cups   ( 213   g )   whole wheat flour I used regular flour since I was too lazy  to grind any wheat  1   teaspoon   baking soda 1   teaspoon   ground cinnamon ¼   teaspoon   ground nutmeg ¼   teaspoon   ground ginger ½   teaspoon   salt 2   tablespoons   ( 28   g )   butter ,  melted ½   cup   honey I swapped out half of this for white sugar 1   egg ,  lightly beaten 1   teaspoon   pure vanilla extract 1   cup   unsweetened applesauce ¾   cup   finely shredded carrots ,  about 2-3 medium carrots https://www.melskitchencafe.com/healthy-applesauce-carrot-muffins-a-k-a-carrot-cake-muffins/

Orange Chocolate Raspberry Muffins

These were good, and I would make them again. I might do 50% almond flour next time, but they were good! Orange Chocolate Raspberry Muffins 2 cups raspberries zest from an orange 1/2 cup dark chocolate, coarsely chopped. 1 1/8 cups sugar  I did a generous 1/3 cup of sugar 3 3/4 cups flour or 18.75 ounces 3 3/4 tsp. baking powder 1 1/2  tsp. salt 3 eggs 4 T. melted butter 8 T. oil 1 1/4 cup buttermilk 1/4 cup orange juice 2 1/2 tsp. vanilla extract. You combine wet, combine dry, then fold in the dry and the berries. These made about 21 muffins, and they bake at 425 for about 17 minutes.

Cook's Illustrated Blueberry Muffins

We added peaches to these, which I would not do again. Otherwise, they are a solid recipe.      Cook's Illustrated Blueberry Muffins 2 cups blueberries 1 1/8 cups sugar I did 1/3 cup of sugar 2 1/2 cups flour or 12.5 ounces 2 1/2 tsp. baking powder 1 tsp. salt 2 eggs 4 T. melted butter 4 T. oil 1 cup buttermilk 1 1/2 tsp. vanilla extract. You combine wet, combine dry, then fold in the dry and the berries. These made about 12-15 muffins, and they bake at 425 for about 17 minutes.

Perfect Blueberry Muffins

So, I found this recipe on smittenkitchen.com, and they were good. These are more scone/biscuit like than cake like, which is how I prefer muffins.  I would make these again--they are perfectly good. The Best Apple Crumb Muffins

So, these were good. Like, completely respectable. That being said, they aren't the best, but they are a good base. The batter looked WAY too thick, so I didn't put the rest of the flour mixture in, and I had already gone scant on measuring it out. I think this could be tweaked a bit to make them really quite good.   I really liked these, but I also love orange and chocolate together. You could probably cut down the sugar even more than I did since I didn't cut out too much. They were the teeniest bit stodgy, but I may have over-mixed them a bit. Chocolate Almond Muffins

  I realize these look like cow turds in muffin tins, but I'm very much not a photographer. These had good flavor, but they needed to be sweeter, which is something I don't say about many foods. We poked some chocolate chips into these when they were still warm, and that helped quite a bit, so I would recommend adding chocolate chips to the batter. Pumpkin Muffins

So, these were fine, but I would use the other recipe I blogged from the Bouchon Bakery. Mine were super craggy compared to her picture.
