Yellow Curry

I really like curry, and it's so easy to make at home.  We use the following vegetables: Onions, zucchini, carrots, potato (parboil or cook first) We also add these spices (the turmeric and the curry are what make it yellow) garlic, coriander, curry, cumin, turmeric Brown the chicken with some turmeric and oil. Then, set the chicken aside and put the vegetables in the pan, stir it with 3 Tbs. yellow curry paste (Mae Ploy is the only brand we use). Once it's partially cooked, add one can of coconut milk and the cooked potatoes. Simmer for about 10 minutes. Add about 1 tsp. fish sauce.

 This was really good. I would definitely make this again. Garlic Naan Bread

John makes this and then grills it outside and it is super quick and so good with garlic butter on top.  This is our go to recipe now. ▢ 2/3 cup Warm Water (about 110 degrees) ▢ 2 1/4 teaspoons Active Dry Yeast (1 packet) ▢ 2 teaspoons Sugar ▢ 2 cups Flour ▢ 1/3 cup Plain Greek Yogurt ▢ 2 Tablespoons Extra-Virgin Olive Oil (plus more for cooking) ▢ 1 teaspoon Salt ▢ 4 Tablespoons Melted Butter (for brushing on the top) Here is the link to the original recipe: Homemade Naan Bread – Modern Honey He cooks this on the grill as hot as possible, about 500 degrees, one minute per side. Close the lid during the minute. He also uses kefir instead of plain yogurt.
