Chicken Saag
This was really good. I would definitely make this again. The recipe came from a website called Curry Trail, and the link is below.
- 1 pound chicken thighs or breasts, cut into cubes
- 1 pound spinach
- 2 tablespoon ghee
- 1 teaspoon cumin seeds
- 5 cloves garlic
- 1 inch ginger piece
- 1 white onion chopped
- 3 green chilies adjust as per spice preference
- 1 tablespoon ground coriander powder
- ¼ teaspoon turmeric powder
- Salt to taste
- 2 teaspoons garam masala powder
- 2 teaspoon dried fenugreek leaves/kasuri methi optional
- Water
We used butter instead of ghee, frozen ginger cubes (2), he used canned green chiles (3 Tbs from the can).
John browned the cumin seeds, butter, onions, chilies, and seasonings in the instapot. Then, he added water (1/2 cup) and whole chicken breast. He pressure cooked it for 10 minutes, removed the chicken, cut it into cubes, and then pureed the sauce. He thickened it with about 1 Tbs. of cornstarch water. Afterward, he also threw in about 4 T. kefir.
