ORANGE RICOTTA CHOCOLATE CHIP PANCAKES

These were fantastic. I give them a 9. I was pleasantly surprised how much I liked them. The recipe came from twopeasandtheirpod.com, and my changes are below in bold. Oh, and I doubled this recipe and it would be perfect for about 6 adults or a family.
ORANGE RICOTTA CHOCOLATE CHIP PANCAKES
INGREDIENTS:
1 1/4 cups all-purpose Gold Medal flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons granulated sugar I cut this in half and next time would cut it down to just 1 Tbs. per batch
Zest of 1 orange
1 cup ricotta cheese I used low fat
1 large egg
2 large egg whites
1/2 cup fresh orange juice In addition to this, I had to add some milk to thin it out enough to be pancake batter-like. I just juiced 2 large navel oranges and got about 1 cup of juice.
1 tablespoon olive oil
1 teaspoon vanilla extract
1/2 cup mini chocolate chips I did the Ghirardellis 60% cacoa chocolate discs and just cut them up small
Butter and maple syrup, for serving, if desired We served ours with cream, and they would also be very good with fresh raspberries.

Basically, you combine wet, combine dry, mix them together, fold in whipped egg whites and chocolate towards the end.

  1. To feed 4 adults, double the recipe. I also added buttermilk to thin the batter, and I did 1 Tbs. of sugar for a double batch.

  2. So, I did 3/4 cup of almond flour and it was perfectly fabulous. I also did 1/2 Tbs. of sugar. It needs about 3/4 cup of milk, and we did cara cara oranges
