Backyard Mint Ice Cream


This was nice and refreshing and gets a 7. Peppermint stick ice cream is better, but this was still good, and a great use of the mint in my garden. I used wintergreen and mojito mint. The recipe came from annies-eats.com. I served it with chocolate sauce.


  • 2 cups whole milk, divided
  • 4 tsp. cornstarch
  • 1¼ cups heavy cream
  • Pinch of fine sea salt
  • 2/3 cup granulated sugar
  • 2 tbsp. light corn syrup I left this out
  • 1½ oz. (3 tbsp.) cream cheese, softened I used only 1 TBS
  • A large handful of fresh mint leaves, roughly torn
