Vegetarian Tostadas

So, these were fast and good. I would give them a 7. I like that they are kind of a blank slate and you could make them more impressive quite easily. Here is what I did:

Cook a corn tortilla in a little oil until it is a bit crispier than normal

Spread refried beans (we flavor ours with salsa, sour cream, and taco seasoning) over the warm shell, and then cheese of your choice (we did pepperjack). From there, I spread on guacamole, shredded lettuce, olives, and then pico de gallo (just chop up a couple of tomatoes with a bit of onion and cilantro and lime juice).
