Peanut Butter Fudge Cake
My picture of this looked terrible, so I'm leaving it out. This was good, but there was way too much peanut butter in it. Like, your jaw cements shut once you bite into it. Another problem I had is that my cake sank a bit in some spots, so those pieces had way more peanut butter than others. The cake part was good and tasted like a Texas sheet cake. Also, I used a different chocolate frosting recipe that calls for only 2 C. of powdered sugar, but the ingredients were pretty much the same. Anyway, I will probably cut the peanut butter down by 1/2 C. next time. As it, it gets a 7 and the recipe came from thespiffycookie.com.
Ingredients:
For the cake:
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 cup unsalted butter
1/4 cup unsweetened cocoa powder
1 cup water
1/2 cup buttermilk
2 large eggs, lightly beaten
1 teaspoon vanilla extract
16 ounces (about 1 & 1/2 cups) creamy peanut butter
For the icing:
1/2 cup unsalted butter
1/3 cup buttermilk
1/4 cup unsweetened cocoa powder
16 ounces confectioners’ sugar, sifted
1 teaspoon vanilla extract
