Chocolate Waffles
I really, really liked these. I think it’s because they feel like dessert without being terrible for you. They taste a bit like a brownie, and I will make these again for sure (they were fantastic with cream and berries). I give them a 7.5, and the recipe came from annies-eats.com, although I think she originally got it from Alton Brown. I put them as the “best of” category because I am done searching for a chocolate waffle recipe. If you put the butter in instead of oil, I don’t see how they would be much better with another recipe.
Chocolate Waffles
INGREDIENTS
1½ cups (7 oz.) all-purpose flour
3 tbsp. (1¾ oz.) sugar I used brown sugar instead and you could cut this down slightly, but don’t leave it out and don’t cut it down too much
½ cup (1½ oz.) cocoa powder I used the Callebaut Dutch Process cocoa, and I highly recommend this
1 tsp. baking powder
1 tsp. salt
½ tsp. baking soda
3 large eggs, beaten
4 tbsp. butter, melted and slightly cooled I used olive oil instead
1 tsp. vanilla extract
2 cups buttermilk, at room temperature I also added a few Tbs. of milk
¾ cup mini chocolate chips We cut this down, but put dark chocolate chunks in the waffle squares when they came out
Nonstick cooking spray
This is super easy. You combine the dry ingredients and mix well. You mix all the wet ingredients together. You mix them together just until combined. You throw in the chocolate chips and let the batter rest for about 5 minutes or so before you cook. The batter is thicker than typical waffle batter.

Here is a better version. Put 1/3 cup or 2 oz. of flour in a bowl and then add almond flour until you reach 7 oz. (sift this to get lumps out). We only use 2 Tbs. of brown sugar ,and I only had 50% buttermilk today and they turned out fabulously.
ReplyDeleteI do half almond flour and half normal flour, and you only get 6 waffles out of a single batch so we double it.
