Chocolate Chunk Gingerbread Cookies
While these had awesome flavor, they were a tad dry. Next time I'll either cut down on the cooking time or decrease the flour. They get a 7 and the recipe came from thefoodcharlatan.com.
- 1 cup unsalted butter, softened (2 sticks) I used 1 stick butter and 1/2 C. oil
- 1 cup brown sugar, packed I used 2/3 C.
- 1/4 cup molasses
- 2 eggs
- 2 teaspoons vanilla extract
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ground cloves
- 3 1/2 cups all purpose flour, spooned and leveled
- 2 tablespoons cornstarch
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 11.5 ounces semi-sweet chocolate chunks (about 2 cups)
