Chocolate Chunk Gingerbread Cookies


While these had awesome flavor, they were a tad dry. Next time I'll either cut down on the cooking time or decrease the flour. They get a 7 and the recipe came from thefoodcharlatan.com.

  • 1 cup unsalted butter, softened (2 sticks) I used 1 stick butter and 1/2 C. oil
  • 1 cup brown sugar, packed I used 2/3 C.
  • 1/4 cup molasses
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cloves
  • 3 1/2 cups all purpose flour, spooned and leveled
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 11.5 ounces semi-sweet chocolate chunks (about 2 cups)
