French Cabbage Soup

This soup is tremendous! My great friend Becky made this, and it’s one of my favorites. I give it an 8. Here is the recipe:

Roux recipe:

1 1/2 sticks butter

1 cup flour.

 

Melt butter and stir in flour. Simmer for 3-5 minutes stirring constantly.

 

In big kettle, saute:

 

4 Tbs. butter

2 cups onions

2 cups carrots

 

Add:

 

4 quarts chicken broth

1/2 lb. Polish sausage (Kielbasa), diced and peeled

2 cups raw potatoes, diced and peeled

2 heads chopped cabbage

 

Simmer 20 minutes

 

Add:

Roux, stir until smooth. Add salt to taste. Simmer 20 minutes.
