Green chili beef

I got this recipe from my mother-in-law and really love it. This works great with Mexican food.

3-4 lb. beef roast
1 can tomatoes with green chilies
1 TBS. chipotle in adobo (I take the seeds out of this to cut down on the heat)
Garlic (I added about 4 cloves)
1 chopped onion
A few squirts of ketchup (I didn't add this since I'm still diabetic, but will when I'm not).

Cook in a crockpot on high for 5-6 hours, shred, then serve with tortillas, lettuce, cheese, salsa, guacamole, beans, general Mexican food goodness.
