Cheesy Bacon Ranch Roasted Potatoes
These are essentially skillet potatoes that you bake in the oven first. So, this came from cookingclassy.com, and it is a keeper. I give this an 8 because bacon is pretty much the best thing ever.
Cheesy Bacon Ranch Roasted Potatoes
- 6 slices bacon, cooked and crumbled or chopped it bits
- 2 lbs russet potatoes, scrubbed and rinsed, cut into 3/4-inch cubes (about 7 cups) I did about 12 smaller Yukin gold potatoes
- 2 1/2 Tbsp olive oil
- 1/2 tsp sea salt, more to taste if desired
- 1/2 tsp freshly ground black pepper
- 4 oz medium or sharp cheddar cheese, shredded (use 2% if desired) I used sharp cheddar, and just put on what we like
- Light ranch dressing, see notes below I made my own homemade ranch dressing
- 2 green onions, chopped I doubled this
Essentially you chop the potatoes, (you can leave the skin on) and cover them in olive oil and salt and pepper and roast them at 400 degrees for about 55 minutes, stirring them 2-3 times. Then, I cooked my bacon in the skillet, wiped out the grease, put the potatoes back in, and combined it all together.
