Oatmeal Chocolate Chip Cake with Cream Cheese Frosting


This was pretty darn easy, and I liked it just as much as the oatmeal cookie cake recipe from the Layered cookbook that was twice as much work. It's a melskitchencafe.com recipe and it gets a 7.

CAKE:

  •  1 cup (3.5 ounces) old-fashioned oats 
  •  1/2 cup (1 stick, 8 tablespoons) butter, cut into tablespoon-size pieces and softened to room temperature 
  •  1 1/4 cups boiling water 
  •  2 large eggs 
  •  3/4 cup (5.5 ounces) granulated sugar I used 1/4 C.
  •  1 1/4 cups (9.25 ounces) light or dark brown sugar I used 1 C.
  •  1/2 teaspoon salt 
  •  1 teaspoon baking soda 
  •  1 teaspoon baking powder 
  •  1 teaspoon cinnamon 
  •  1 3/4 cups (8.75 ounces) all-purpose flour 
  •  1 1/4 cups (about 8 ounces) chocolate chips, milk, semisweet or bittersweet

CREAM CHEESE FROSTING (OPTIONAL):

  •  4 tablespoons butter, softened to room temperature 
  •  4 ounces cream cheese, softened to room temperature 
  •  1/2 teaspoon vanilla extract 
  •  2 cups (8 ounces) powdered sugar
