Double Chocolate Chunk Muffins
I love chocolate muffins, and these really should just be called what they are, which is chocolate cupcakes. The recipe came from melskitchencafe.com and they get an 8. You could definitely cut down the sugar by another 1/4 C. or cut down the chocolate chips a bit.
- 1 3/4 cups (8.75 ounces) all-purpose flour (see note for whole wheat suggestions)
- 1 cup (7.5 ounces) granulated sugar I used 3/4 C.
- 2/3 cup (2.5 ounces) unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups (9 ounces) semisweet chocolate chunks (or chocolate chips)
- 2 large eggs
- 1 1/2 cups buttermilk (or 3/4 cup milk whisked together with 3/4 cup sour cream or yogurt)
- 1 teaspoon vanilla extract
- 1/2 cup olive oil
- 1/2 cup (3 ounces) chocolate chunks for sprinkling on top
