Lemon Pepper Cajun Chicken Fettuccine Alfredo
I really enjoyed this, especially since I was getting tired of my usual fettuccine alfredo. I swapped out all the butter for oil and it was still plenty rich. I was also low on parmesan cheese since it spilled in the fridge, so it's saying something that it still had good flavor with no butter and less cheese. - 1 pound linguine or fettuccini
- 1 tablespoon extra virgin olive oil
- 6 chicken cutlets or 1 pound tenders
- 2 tablespoons cajun seasoning
- 1 1/2 cups, plus 2 tablespoons parmesan cheese I probably used 1/2 C.
- kosher salt and black pepper
- 4 tablespoons salted butter I used oil
- 3 cloves garlic, chopped
- crushed red pepper flakes I left these out
- 2 tablespoons lemon juice
- 1 cup low sodium chicken broth
- 1 cup heavy cream I used half and half
- 2 tablespoons chopped fresh parsley I left this out
