Buckeye Brownies

So, these were good and I would make them again. My one complaint is that brownies weren't fudgy, so I would adjust that part for sure. The recipe came from halfbakedharvest.com, and it's definitely good. You essentially mix the eggs, add the oil and the sugar and the vanilla, then add the dry ingredients. Don't over mix, and put in an 8x8 pan and bake at 350 for like 12-15 minutes. You cool this mostly, and then I put the peanut butter mixture over. You melt the chocolate in the microwave, let it sit for 5 minutes, pour it over the top and put it in the fridge for 10 minutes. You cut them, put them back in the fridge to set for another 30 minutes. The recipe came from halfbakedharvest.com

Ingredients

 

·         eggs, at room temperature

·         1/2 cup melted coconut oil I did olive oil instead, and next time I would do half oil half butter

·         1/3 cup pure maple syrup I did sugar

·         2 teaspoons vanilla extract

·         1/3 cup almond flour I think normal flour would be better

·         1/2 cup unsweetened cocoa powder

·         1/2 teaspoon baking powder

·         1/2 teaspoon kosher salt

PEANUT BUTTER MIX

·         3/4 cup, plus 2 tablespoons creamy peanut butter (just peanuts and salt)

·         3 tablespoons pure maple syrup I left this out

 

·         3 tablespoons melted coconut oil I left this out, but I did add in like 3 oz. of cream cheese and 1/2 tsp. vanilla to the peanut butter

·         6 ounces dark chocolate, chopped You add like 2 T. peanut butter to this after it's melted

·         sea salt
