Pecan Pie Bars


I love pecan bars and they are so dang easy to make. While they're not as good as pecan pie, they are still just lovely. I actually don't know where this recipe originally came from, but I've made these for years. They get an 8.

2 C. flour
1/2 C. sugar I used 4 tsp.
1/8 tsp. salt
3/4 C. butter
1 C. brown sugar
1 C. corn syrup
1/2 C. butter
4 eggs, lightly beaten
2 1/2 C. pecans, finely chopped
1 tsp. vanilla

Heat oven to 350. Combine flour, sugar and salt, cut in 3/4 C. butter until mixture resembles very fine crumbs. Press evenly into a greased 9 x 13 pan. Bake at 350 for 17-20 minutes or until lightly browned.
Combine brown sugar, corn syrup, and 1/2 C. butter in saucepan; bring to a boil over medium heat, stirring gently. Remove from heat. Stir 1/4 of the hot mixture into beaten eggs; add to remaining hot mixture. Stir in pecans and vanilla. Pour filling into crust. Bake at 350 for 35 minutes or until set. Cool completely in pan on wire rack. Cut into bars. Serve with a dollop of whipped cream or ice cream.
