Cream Cheese Stuffed Chocolate Chip Banana Bread Coffee Cake
So, this was good but not amazing. It came from carlsbadcravings.com, and the recipe is great. It’s just not that much better than traditional coffee cake. So, I think the cream cheese layer was too much, I would definitely cut this in half if I made it again. I put my changes below in bold:
Cream Cheese Stuffed Chocolate Chip Banana Bread Coffee Cake
Cinnamon Walnut Streusel
- 1/2 cup walnuts
- 1/2 cup flour
- 1/2 cup brown sugar, packed
- 1/2 tablespoon cinnamon
- 4 tablespoons cold butter, cubed
- 2 1/4 cups all-purpose flour
- 1 1/4 teaspoons baking powder
- 1 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup butter, softened
- 1 1/2 cups sugar I cut this down to 1 cup
- 2 large eggs
- 1 cup mashed bananas (about 2 large ripe bananas)
- 1 tablespoon vanilla extract
- 1 1/4 cups sour ream (not nonfat) We used light
- 1/2 cup semi-sweet chocolate chips (optional)I would use Ghirardelli big baking chips instead of chocolate chips
- 1/2 cup walnuts, chopped (optional)we left this out
- 8 ounces cream cheese, softened
- 1/4 cup Reserved Batter (see instructions)
- 1/4 cup sugarI cut this in half
- 1 teaspoon vanilla extract
- 1 cup Powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk

You grease and flour a big tube pan. Then, you make the streusel in the food processor by pulsing everything but the butter and then adding in the butter. For the cake, you mix the butter and sugar, add eggs, one at a time, then add bananas and vanilla. You alternate dry with wet (sour cream), and then pour it into the grease pan after first reserving 1 cup and secondly leaving 1/4 cup in the bottom of the mixer. Then, you add the cream cheese stuff in to make the filling layer. You spread that on top of the batter you already have in the pan, and then use the remaining cup to go on top of that. You add streusel. You bake it at 350 for about 55 minutes, and then you let it cool for an hour and invert the pan.
