CINNAMON ROLL PANCAKES

So, I didn’t eat these even though they smelled fabulous because I couldn’t bear to eat that much sugar for breakfast, but John tried them and assured me they are a 9. He says they are more like dessert. Anyway, Gavin found this recipe on Pinterest, so we gave them a try. I used my own buttermilk pancake recipe, which I have included below. Then, I used the cinnamon filling and cream cheese glaze recipe from the web address below.

The following pancake recipe came from my dad, and I have no idea where he got it. Oh, and I double it and it feeds our family perfectly:

Buttermilk Pancakes

1 cup flour

2 tsp. sugar

¾ tsp. baking powder

¼ tsp. salt

½ tsp. baking soda

1 ¼ cup buttermilk

2 egg yolks, slightly beaten

2 egg whites, stiffly beaten

2 tbs. melted butter, at room temperature.

In bowl, sift together flour, sugar, baking powder and salt. Combine buttermilk, baking soda and egg yolks. Mix lightly and add to dry ingredients. Mix until batter is barely smooth. Stir in butter. Gently fold in egg whites. Heat griddle to 350. Pour scant ¼ cup batter onto hot griddle.

Now for the Pinterest part . . .

CINNAMON FILLING

1/2 cup butter, melted

3/4 cup packed brown sugar

1 Tablespoon ground cinnamon

CREAM CHEESE GLAZE

4 Tablespoons butter

2 ounces cream cheese I typically add more to my cinnamon roll glaze

1 1/4 cups powdered sugar

1 teaspoon vanilla extract

Essentially, you make the pancake batter as usual. Then, for the cinnamon filling, you melt the butter, add the brown sugar and cinnamon, and then throw it in a ziploc bag and put it in the fridge until it firms up a bit. Make the glaze and set aside. After you put the pancakes on the griddle (and make sure you don’t make them too big, like I did), you snip the top off the ziploc bag (don’t make the opening too big) and then start in the center of the pancake and make a swirl outward. You can see a picture at the link above. Then, flip them as usual, and put the glaze on top when they get off the griddle. Don’t overcook them, or the cinnamon filling will burn on the griddle. Just trust me on this one.
