Vanilla Chai Cake

Image
I was so frazzled when I was making this cake that I forgot to decorate it on my cake stand, and that's why it's looking sad on a cooling rack. Having my kids help me cook is hazardous to my stress levels. Anyway, this had good flavor and a little extra something that a regular spice cake doesn't have. It gets an 8 and the recipe came from sugarandsparrow.com. Chai Spice Mix 4   tsp   ground cinnamon 2   tsp   ground ginger 1   tsp   ground cardamom  1/2   tsp   ground allspice 1/4   tsp   ground cloves Vanilla Chai Cake 1 1/4   Cups   (296ml) whole milk 1   chai tea bag 2 3/4   Cups   (290g) cake flour, sifted before measuring 2 1/4   tsp   baking powder 1/2   tsp   baking soda 4   tsp   chai spice mix (recipe above) 1 1/4   tsp   salt 1  Cup   (226g) unsalted butter, room temperature I substituted half of this for olive oil 1 3/4   Cups   (...

Creamy Green Chili Chicken Bake

Image
I know this looks like a pale blob, but I think it tastes better than it looks. Full disclosure--I didn't personally eat this because I wasn't in the mood so I ate Kix for dinner. That destroys all my credibility right there. Everyone liked it, and Emma said it tasted like deconstructed chicken enchiladas. Creamy Green Chili Chicken Bake 2 – 3  lbs boneless skinless chicken breasts ( 4 – 6  breasts) 1 teaspoon  garlic powder I also added 1 tsp. onion powder 1 teaspoon  cumin 1/2 teaspoon  chili powder 1/2 teaspoon  smoked paprika (optional, if you don’t have it don’t stress) I forgot this but I would add it next time 1/4 teaspoon  black pepper 16oz  jar green salsa (I prefer mild) We used Herdez 8oz  cream cheese Kosher salt to taste Cooked rice, for serving. So, I put mine in the crockpot on low for 4 hours, until the chicken was 185 degrees. She said you can also do this in the pressure cooker (11 minutes) or bake at 350 degrees. Essentiall...

Chicken Noodle Soup

Image
Chicken Noodle Soup   In the pressure cooker, cook 2 chicken breasts with a whole onion in 1 cup of water with 1 tsp. salt.   This takes about 13 minutes for me. Remove the chicken.   Then, you add a whole bunch of celery, cut into large chunks and about 8 large carrots, cut into big chunks. You pressure cook this for a minute, TOPS. Depressurize, and then I add:   4 cans of Swanson chicken broth (16 oz. can) Probably like 1 tsp. of seasoned salt Around 1 tsp. onion powder 1-2 Tbs. of better than bouillon 1-2 Tbs. dry parsley Cracked pepper   I use Grandma’s brand homemade egg noodles that you can find in the frozen section of Smith’s. I put in half a package of these, shred the chicken and add it back in, and boil for around 10 minutes. I also sometimes add frozen peas. This is salty soup, so if you like it more watered down, add water. Sometimes I also add some seasonings from the Italian herb grinder.

Mel's version of orange rolls

There is no picture because I'm only blogging this updated recipe because we apparently have issues following updated directions in the comments, haha.   Orange Rolls--1 batch   2 Tbs. yeast ¼ cup water with 1 T. sugar 1/4 cup sugar 1/4 cup butter, melted ¼ cup canola oil 1 cup warm buttermilk 4 1/2 cup flour 3 beaten eggs 2 tsp. salt   Filling:   1 1/2 cube butter 2/3 cup powdered sugar orange rind from 5 oranges     Proof the yeast in the water and 1 Tbs. of sugar. I put flour in the bottom of the Bosch, and then add the sugar and salt. I then add the wet ingredients. This dough is sticky, but not insanely so. I run the Bosch for about 5 minutes, maybe a bit less. As soon as the dough is done, I put this in the fridge overnight to rise. To assemble, you roll out in a rectangle (I use a bench cutter to even out the rectangle) and spread filling over dough. Roll up and cut with dental floss or string. Let them rise for ab...
