BLACK BOTTOM BANANA COCONUT CREAM PIE


So, this pie is VERY good. It's easily a 9. It came from melskitchencafe.com, and as always, she has amazing recipes.

BLACK BOTTOM BANANA COCONUT CREAM PIE

COCONUT GRAHAM CRACKER CRUST:

  •  1 1/2 cups (6 ounces) graham cracker crumbs (about 11 rectangle graham crackers)
  •  1/2 cup (1 ounce) toasted shredded coconut (see note) I did 1/4 cup unsweetened coconut and 1/4 cup sweentened coconut
  •  1 tablespoon brown sugar I left this out
  •  1/2 cup (8 tablespoons, 4 ounces) butter, melted (I use salted)

CHOCOLATE GANACHE:

  •  1/2 cup semisweet or bittersweet chocolate chips I did dark chocolate from Callebaut
  •  1/2 cup heavy cream I did 1/3 cup

PUDDING FILLING:

  •  1 can (13.5 ounces) coconut milk I did full fat but I left plenty of the massively fattening coconut cream part on the sides
  •  1 1/2 cups heavy cream or half and half
  •  3 large egg yolks
  •  3/4 cup (5.5 ounces) granulated sugar I only did 1/2 cup
  •  1/3 cup cornstarch
  •  Pinch salt
  •  2 tablespoons butter
  •  1 teaspoon vanilla extract
  •  1 teaspoon coconut extract

For Decorating

  •  2-3 medium bananas, peeled and sliced 1/4-inch thick

TOPPING: I just did my own normal cream--2 cups if you want to decorate with the piped swirls like i did, next time i would do 2 1/2-3 cups if i did the same decoration

  •  1 cup heavy whipping cream
  •  1/4 cup powdered sugar
  •  1/4 teaspoon vanilla extract
  •  1/2 cup toasted shredded coconut (see note)

Essentially, for the crust, I pulsed everything in the Vitamix and then added butter and pulsed a couple of times. I put it in the pie plate and baked at 350 for about 10 minutes. For the pudding, you put everything except the butter and extracts and then cook over medium heat until it thickens and boils. It thickens really fast. You might even get big bubbles. Then, you strain it and add the extracts and butter. You cool the crust, add the ganache, put it in the fridge, and then when you are ready to serve you put sliced bananas down, then the coconut cream, then the whipped cream and more bananas. Super yum.

  1. Don't cook this too little or it will be runny. It thickens fast, but then i would cook it until you do get bigger bubbles when it boils.
