Grilled Vegetable Lo Mein

This was surprisingly good considering how fast it was to make. I will definitely make it again, and grill some green onions along with the vegetables next time. It gets a 7.5 and the recipe came from whitneybond.com. While Grain Cinnamon Applesauce Bread

I cut into the loaf before I realized that I had forgotten to take a picture, so it doesn't look as pretty as it could. Anyway, this was tasty and easy to make. I underbred it just slightly, but it was still good. Double Chocolate Chunk Muffins

I love chocolate muffins, and these really should just be called what they are, which is chocolate cupcakes. The recipe came from melskitchencafe.com and they get an 8. You could definitely cut down the sugar by another 1/4 C. or cut down the chocolate chips a bit. 1 3/4 cups (8.75 ounces) all-purpose flour (see note for whole wheat suggestions) 1 cup (7.5 ounces) granulated sugar I used 3/4 C.  2/3 cup (2.5 ounces) unsweetened cocoa powder 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 1/2 cups (9 ounces) semisweet chocolate chunks (or chocolate chips) 2 large eggs 1 1/2 cups buttermilk (or 3/4 cup milk whisked together with 3/4 cup sour cream or yogurt) 1 teaspoon vanilla extract 1/2 cup olive oil 1/2 cup (3 ounces) chocolate chunks for sprinkling on top Here's the link:  https://www.melskitchencafe.com/double-chocolate-chunk-muffins/

Carol's Rhubarb Cheesecake

This is another recipe of my mother-in-law's that Jared had a lot growing up. We've had a rhubarb plant in our garden for 3 years now and this is literally the first time I have ever used it (for shame). Remember to put a cookie sheet under the springform pan when the crust is baking, because the butter will melt out of the bottom. She (Carol) got the recipe from the newspaper years ago, and Jared gives it an 8 (he admits he's biased, but it really is quite good). I enjoyed making and eating this because it reminds me of her.  Crust: 1 C. flour 1/4 C. sugar 6 TBS butter, melted Rhubarb layer:  3 C. fresh rhubarb cut into 1/2 inch pieces This was about 6 medium-sized stalks 1/3 C. sugar 1 TBS flour Cream Cheese layer: 16 oz. cream cheese, softened 1/2 C. sugar 2 eggs Topping: 8 oz. sour cream  2 TBS. sugar 1 tsp. vanilla For crust: Mix flour, sugar, and butter and pat into a 10-inch springform pan. Turtle Waffle Cookies

This was actually my mother-in-law's recipe, so Jared had these a lot growing up. These look like regular waffles, but they're kind of a brownie waffle cookie combo. They were super easy and were awesome served with ice cream.  1/2 C. butter, melted 6 TBS cocoa 3/4 C. sugar I used 1/2 C. 2 eggs 1 C. flour 1 tsp. vanilla Blend butter and cocoa together. Add the other ingredients and beat until smooth. The batter will be thick. Drop a generous tablespoonful of the dough into each section of a pre-heated waffle iron. Close it and cook for 1-3 minutes (we cooked ours for about 1 minutes and 15 seconds). Carefully open and remove with a fork. 

Oatmeal Spice Muffins

I cut down the sugar in these a bit too much, so they weren't good plain, but they tasted great with raspberry jam. Smoked Gouda Potato Skillet

Jared made this for Mother's Day since he knows I love skillets for breakfast, and this was awesome. I would definitely give it a 10 (because you can't go wrong with smoked gouda and bacon). He said he combined a bunch of different recipes, so the ingredients below are to the best of his memory.  1/2 lb. bacon 1/2. diced onion  4 Yukon gold potatoes 1/2 lb. pastrami 1/2 lb. smoked gouda  Spinach  He said he would add a chopped green pepper and egg next time. He cooked the bacon and set it aside. He then cut up the pastrami, browned it in the same skillet, and set it aside. In the same skillet he used to cook the bacon, he cooked the diced onion. While the onion was cooking, he poked holes on the potatoes and cooked them in the microwave for 4 minutes. He cut the potatoes and put them in the skillet with the onion until they were brown and cooked through. He added the bacon and pastrami back to the skillet and mixed well. He served it with spi...
