Chipotle Grilled Chicken and Mango Cobb Salad

Chipotle Grilled Chicken and Mango Cobb - Lillie Eats and Tells



  • 2 cups chopped romaine or butter lettuce 
  • 1/2 cup chipotle grilled chicken, chopped (100g) We sprinkled our chicken with Chef Paul Prudhomme Magic Seasoning Poultry Magic blend
  • 1/3 cup sliced or chopped mango (50g) I did a full mango
  • 1 slice of bacon crumbled I left this out
  • 1 Tbsp. sliced red onion (15g) I did half an onion
  • 1/4 cup corn (50g)
  • 1/3 avocado (35g) I used a full avocado, and I also added egg and tomato
  • 1 Tbsp. reduced fat blue cheese (12g) We did cotija cheese
  • 1 Tbsp. roasted pepitas (6g) I used pumpkin seeds from Costco
  • 2 1/2 Tbsp. lightened up Cilantro Lime Ranch* (40g) For this, I made my ranch dressing and skipped adding the dill and then put it in the blender and blended in a bunch of cilantro and lime juice (1-2 limes), a seeded jalapeno pepper, and some fresh garlic
