Black Bean Salad


I have to ask Brit for this recipe every time I make it, so I figured I could cut out the middlewoman and just blog it already. This is a really good healthy and light summer salad. It's also very pretty when it's all assembled. Its gets a 7 and I don't remember where it originally came from.

2 cans black beans, rinsed
20 oz. frozen corn
chopped cilantro
3 limes, juiced
4 tomatoes, chopped
1 large jalapeño, diced
1 green pepper
2 bunches green onions

Combined rinsed beans and frozen corn in salad bowl. Add other vegetables. Combine olive oil, salt, pepper, and lime juice in a Pyrex cup. Drizzle over salad.

  1. It originally came from your parents. I think Dad found it in Fine Cooking. It's been a favorite go-to salad for years. My co-workers go nuts over it.
