Reese’s Pieces Cookies

These were pretty awesome. They get an 8.5, and the texture was as good as it gets (chewy, but also soft). I found this idea on pinterest, but the cookie recipe itself looked sub-par, so I found a better one at melskitchencafe.com that Stef had made before. So, I took the Chocolate Chip Peanut Butter and Oatmeal Cookies recipe from the melskitchencafe.com blog and altered them to add in the Reese’s Pieces. That was pretty much the only change, and mine baked for about 10 minutes. I noted my changes below in bold.

See how the candy doesn’t crack? It’s because I pushed them into the warm cookies. It also keeps them uniform.

Chocolate Chip Peanut Butter and Oatmeal Cookies

Yield: Makes 2-3 dozen cookies

Ingredients

  • 1 cup (2 sticks) butter
  • 1 cup peanut butter
  • 1 cup packed light brown sugar I didn’t pack mine
  • 1 cup granulated sugar I decreased this by about 2 Tbs. and it could easily get decreased by way more
  • 1 teaspoon vanilla
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 cup quick rolled oats
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 12-ounce bag semisweet or milk chocolate chips I did 1 cup and I also added about 1-1 1/2 cups of Reese’s Pieces (however, I did 75% in the dough and pushed the remaining few into the cookies when they come out of the oven. This technique works well)

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl with an electric handheld mixer or in the bowl of a stand mixer, cream together the butter, peanut butter, brown sugar and granulated sugar. Add the vanilla and eggs and mix until the batter is light in color, 2-3 minutes. Stir in the flour, oatmeal, baking soda and salt. When it is mostly combined but there are still dry spots, add the chocolate chips and mix until well combined.
  3. Scoop out tablespoon-sized balls of dough onto a lined baking sheet (with parchment, silpat or coated with cooking spray), spacing the cookies 1-2 inches apart. Bake for 10-12 minutes until very lightly browned and still soft in the center. Remove the cookies to a cooling rack to cool completely.
