Delicious Caesar Salad {With Homemade Dressing}
I didn’t include a picture because it’s salad dressing. Imagine salad dressing. There—no picture needed. I found this recipe on melskitchencafe.com and this really is just a recipe for caesar salad dressing, because I only made the dressing part. I am sure the salad part is great as well, but I didn’t make it. The dressing itself is really quite good—it’s a keeper. I would give it a 7.5, and I will use this regularly from now on.
Delicious Caesar Salad {With Homemade Dressing}
Sometimes I like to add a dollop of mayonnaise or thick, plain Greek yogurt (about 2 tablespoons) to the dressing before blending to give it a creamy texture. And sometimes I don't. Either way is delicious.
Ingredients
- 1/2 cup olive oil I reduced this to probably 1/3 cup oil
- 1/4 cup red or white wine vinegar I probably did a very, very scant 3 Tbs.
- 2 tablespoons fresh lemon juice (from 1-2 lemons)
- 2 cloves garlic, finely minced or pressed in a garlic press
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper I reduced this
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/4 teaspoon hot sauce (like Tobasco or Tapatio) I cut this in half, but a full amount would have been fine
- 2 tablespoons mayonnaise or thick, plain Greek yogurt (optional - see note)
Salad: I didn’t even do this
- 2 heads chopped romaine lettuce
- 1/2 - 1 cup freshly grated or shaved Parmesan cheese (I use my vegetable peeler to shave slices from a large block of Parm)
- Croutons (homemade method here)
Caesar Dressing:
Directions
- For the dressing, combine all the dressing ingredients together and whisk vigorously, shake together in a jar, or blend until well-combined.
- Toss the romaine lettuce and Parmesan cheese with the dressing. Top with the croutons and serve immediately.
