Roasted Butternut Squash

So, I failed to get a picture of this because I just had it at a ward function and snagged the recipe from Cynthia Ludlow. This is a great side dish. It kept its shape and had great flavor. I loved it, and would give it a 7.5. Roasted Butternut Squash 4 Tbs. butter Garlic Butternut squash, cut into the shape of an upside-down U, probably about 1/2-1" thick. Cut squash. Brush squash with this garlic butter mixture and then sprinkle panko and parm cheese mixture (60,40) on top of the squash. Bake at 375 for about an hour, uncovered, and then move up to 425 to crisp up. Sprinkle with parsley. You lay them kind of overlapping.

Roasted Brussel Sprouts

I like Brussel sprouts, so I would give these a 7. I looked around online and settled on the following: 1 lb. brussel sprouts I buy the frozen ones from Costco that are small olive oil kosher salt fresh garlic You take the sprouts and rub the oil on them, then add the salt. I added about 1 clove of fresh garlic as well, and that was fun. You put them in a 400 degree oven for about 20 minutes, shaking the pan every so often.

Gingerbread bites

These were fine, but not great. I think part of it is that I changed things too much. I put my changes below in bold, and my version was a 6. The original would get a 7.5. These originally were given to me by my neighbor, Roxanne, and hers tasted like oatmeal cookie dough. I think I cut the molasses too much. The recipe came from Pinterest, and if you make them like you’re supposed to, they are very good. Chocolate Raspberry Cake

I have blogged so many of these versions, and this is the best one, hands down (the chocolate cake recipe itself could be swapped out because there are so many good ones, but this version gives you the perfect raspberry, chocolate ratio). This gets a solid 9.5. So, I often use this chocolate cake recipe for trifle, and it just turns out awesome. I tried it in 3 8-inch pans today, and it was great, but it dried out more  than I would like. I think part of the problem is that they sat out all day. I think you need to wrap them as soon as they are cool and then leave them at room temp for a day because the 9x13 pan version is so crazy moist that it’s not the recipe but some other factor. My friend Lisa made this, and it was really good. She found this on Pinterest, and it came from therecipecritic.com. It probably gets between an 8, and I would absolutely put this in a regular recipe rotation. It’s easy and tasty. I put Lisa’s changes and my comments in bold. Coconut Cream Cheese Cookies

Ignore the ugly picture that looks like a dry, nasty biscuit. These were good, and I would make them again—the kids liked them, and gave them a 7.5. I definitely think they need macadamia nuts though. I found the recipe on pinterest.
