Creamy Chicken Noodle Soup

This was tasty and pretty easy. I gave it a 7, Jared gave it a 6, and Melly gave it an 8, so we'll settle on a 7. Jared likes the traditional chicken noodle soup better, so I'll probably keep making that since it has fewer calories and carbs than this version. Buttermilk Ranch Dressing

I got this recipe from ourbestbites.com, and it was the best so far. I give this an 8. I put my changes in bold below. Also, the first night I combined half ranch/ half fresh guacamole, and it was super fabulous. Green Lentil Soup with Curried Brown Butter

This was an okay recipe. It had good flavor, but wasn't very satisfying. Both Jared and I gave it a 6. I served it with Naan bread. I got the recipe from melskitchencafe.com. Green Lentil Soup with Curried Brown Butter INGREDIENTS 2 tablespoons butter 1 large yellow onion, chopped 3 cloves garlic, chopped 1/4 - 1/2 teaspoon red pepper flakes 5 1/2 cups low-sodium chicken or vegetable broth 1 1/2 cups green lentils or green split peas, picked over and rinsed 3 tablespoons butter 1 tablespoon Indian curry powder 3/4 cup coconut milk, light or regular 1/4 teaspoon salt, plus more to taste 3 carrots, chopped Toasted bread or croutons for dipping, optional DIRECTIONS In a large saucepan over medium heat, combine the 2 tablespoons butter, onion, garlic, and red pepper flakes, stirring regularly, until the onions soften, about 5-7 minutes. Creamy Beef Taquitos

So, I completely made up my own version by combining about 3 versions, because none of the versions I looked at really seemed fabulous. These get an 8. John took this blurry picture with his NEW cell phone camera. BOO to bad pictures. 1/3 of a brick of cream cheese 1 lime, juiced 2 cups of shredded beef (I put mine in the food processor because I wanted it really small) small handful cilantro, diced 1/4 cup green salsa 1 tsp. garlic powder 1 tsp. chili powder 1/2 tsp. onion powder 1/2 tsp. coriander 1/4 tsp. oregano 1/4 tsp. Chipotle chili powder salt 1 cup pepper jack cheese flour tortillas oil and salt Combine ingredients, spread in tortillas, roll, spread with oil, shake on kosher salt, bake at 400 for 10-15 minutes.  

Egg Casserole

I love egg casserole and this is one of the best I’ve had. This came from Stef’s sister-in-law Heather, who got it from a girl in her ward named Toni Roberts. I don’t have a picture, because I was stupid and didn’t take one. Anyway, this was an 8, here it is, and my thoughts are in bold. 1 lb. pork sausage 1 5.5 oz. packaged seasoned croutons (this sounds crazy I know, but Heather said it’s a must and she just gets the package at Costco) 1 1/2 cups shredded cheddar cheese I am going to cut this down 1 cup shredded Swiss cheese I am going to cut this down 1 cup shredded pepper jack cheese I am going to cut this down 8 eggs 1 pint half-and-half I will use milk 1 1/2 cups milk 1 1/2 tsp, dry mustard 1 Tb. minced onion Cook sausage, and set aside. In a 9x13 dish, arrange croutons in a single layer. Add cheese and then sausage. Beat eggs and remaining ingredients and pour over sausage. Cover and refrigerate overnight. Chipotle Beef Taquitos

These had great flavor and I'll definitely make them again. The only thing I didn't like is that the tortillas were really dry and crunchy. I have tried both yellow and white corn tortillas for dishes like this and they all end up dry. I can't figure out what I'm doing wrong or if I need to try a different kind or brand. Anyway, Jared gave them a 7 and I gave them a 7.5. We ate these with homemade guacamole, which is a must. I had made a beef roast the night before, so this is what I did with the leftovers. Chocolate Chip Cookies with cream cheese

So, I am not even going to bother to type this recipe, because I will not make it again. My friend found it on pinterest, and I tracked down the original, so If you want to view the entire thing, you can by clicking the original recipe here:  http://www.averiecooks.com/2013/06/softbatch-cream-cheese-chocolate-chip-cookies.html/print/ These looked good, and they weren’t terrible, but there are too many good chocolate chip cookie recipes out there to use this one again. I think the idea of substituting cream cheese was good, but I just think that chocolate chip cookies need oat flour or oatmeal. Or, they need to be flat and chewy, and these were not chewy or flat. They were tall and crumbly. Not my favorite.
