EASY SHRIMP PESTO PASTA WITH SUN-DRIED TOMATOES
This was good. It tasted a bit like the old pasta milano dish from Macaronic Grill. With shrimp and pesto, you know.
EASY SHRIMP PESTO PASTA WITH SUN-DRIED TOMATOES
- 12 ounces penne pasta
- 1 tablespoon olive oil
- 1 to 1 1/2 pounds shrimp, peeled, deveined and tails removed (see note)
- 1/2 cup heavy cream
- 1/2 cup chicken broth (I use low-sodium) I used white wine
- 1/2 cup chopped sun-dried tomatoes (drained and lightly rinsed if packed in oil or water)
- 1/2 cup basil pesto (see note) I used way more than this
- Freshly grated Parmesan cheese, for serving
I essentially cook the shrimp in garlic butter, take them out, saute the mushrooms, cook down the wine to almost nothing, then add the rest of the stuff. You can thin it with chicken broth if you need to
