Pumpkin Snickerdoodles


So I have never liked snickerdoodles, even as a kid, because they never had much flavor. I made these at the request of a friend, and tried them agin to see if my adult taste buds liked them better, but they were still blah. If you like snickerdoodles, you will probably like these. I won't rate them since I'm biased, and the recipe came from cookingclassy.com.



  • 3 1/4 cups all-purpose flour
  • 3 1/2 tsp cornstarch
  • 1 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 + 1/8 tsp salt
  • 1 1/2 tsp ground cinnamon*
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg*
  • 1/4 tsp ground allspice
  • 1 cup granulated sugar I used 1/2 C. 
  • 3/4 cup packed light brown sugar
  • 1 cup unsalted butter , softened
  • 1 large egg yolk
  • 3/4 cup canned pumpkin puree
  • 1 1/2 tsp vanilla extract

For rolling

  • 1/4 cup granulated sugar
  • 1 1/2 tsp ground cinnamon
