Avocado & Black Bean Taco's

Avocado & Black Bean Taco's from Whole Living Magazine

Ingredients

  • 1/2 avocado
  • 1/4 Mango chunked
  • 1/2 minced clove garlic
  • 1 Tbsp lime juice
  • Dash cumin
  • Coarse salt and freshly ground black pepper
  • Two corn tortillas
  • 1/2 cup thinly sliced kale
  • 1/4 cup cooked black beans
  • 2 Tbsp Mexican style shredded cheese
  • 2 Tbsp toasted sunflower seeds roasted

Directions

  1. In a medium bowl, mash avocado with garlic, lime juice, and cumin. Season with salt and pepper.
  2. Toast tortillas over a gas burner, turning, until lightly charred.  (I don't have a gas burner so I warmed them up in a pan. Divide avocado mixture between tortillas and top with kale, beans, cheese, mango and sunflower seeds. Season with salt.
These taco's were delicious.  I did add some ingredients (highlighted in bold.)
  I really think it took this dish from good to delicious.  I tried it both ways w/ my added ingredients & without.  With the additions this is rated at an 9, w/out 6.  You will want to double or triple the recipe for more than one person.  I really liked the Kale on it.
 
These will be our new "go too taco's."
