Lemon Pepper Cajun Chicken Fettuccine Alfredo

Image
I really enjoyed this, especially since I was getting tired of my usual fettuccine alfredo. I swapped out all the butter for oil and it was still plenty rich. I was also low on parmesan cheese since it spilled in the fridge, so it's saying something that it still had good flavor with no butter and less cheese. It gets a 7.5 and came from halfbakedharvest.com. 1   pound   linguine or fettuccini ▢  1   tablespoon   extra virgin olive oil ▢  6   chicken cutlets or 1 pound tenders ▢  2   tablespoons   cajun seasoning ▢  1 1/2   cups, plus 2 tablespoons  parmesan cheese   I probably used 1/2 C. ▢  kosher salt and black pepper ▢  4   tablespoons   salted butter   I used oil ▢  3   cloves   garlic, chopped ▢  crushed red pepper flakes   I left these out ▢  2   tablespoons   lemon juice ▢  1   cup   low sodium chicken broth ▢  1   cup   heavy cream  I used half and half ▢  2   tablespoons   chopped fresh parsley   I left this out https://www.halfbakedharvest.com/cajun-chicken-fettuccine-

Easy No-Knead Sourdough Peasant Bread

Image
This was a surprisingly good bread, but it tasted more like a french bread than sourdough. I would still definitely make it again because it's so much faster than the usual 24-hour process sourdough bread takes, but will still make it the traditional way when I have the time. This gets an 8 and came from melskitchencafe.com. Also, you really do bake it in a pie plate, but I'm sure you could use a regular bread pan.  3 ½   cups   ( 497 g  )   all-purpose or bread flour 2   teaspoons   granulated sugar 2   teaspoons   instant yeast (see note) 1 ½   teaspoons   salt 1 ½   cups   ( 338 g  )   warm water 1   cup   ( 275 g  )   sourdough starter (fed or discard) https://www.melskitchencafe.com/easy-sourdough-peasant-bread/

Sourdough Banana Bread

Image
I was originally unsure about this, but since we add sour cream to banana bread, there's no reason why sourdough should be much different. I'm glad I tried it because I ended up really liking it, and it's a great way to avoid throwing out my weekly discard sourdough starter. It came from melskitchencafe.com.   ½   cups   ( 350   g )   mashed bananas (about 3 medium bananas) ½   cup   ( 140   g )   sourdough starter, fed or discard ½   cup   ( 100   g )  olive  oil  ½   cup   ( 106   g )   packed light brown sugar I did about half this and half white sugar in order to add up to 1/3 C. total ½   cup   ( 106   g )   granulated sugar See above note 2   large   ( 100   g out of shell )   eggs 1   teaspoon   vanilla extract 1 ¾   cups   ( 249   g )   all-purpose or whole wheat flour  1   teaspoon   baking soda 1   teaspoon   baking powder ¾   teaspoon   salt ½   teaspoon   ground cinnamon 1/2 C. chocolate chips https://www.melskitchencafe.com/sourdough-banana-bread/

Hazelnut Ice Cream

My favorite Italian restaurant is Osteria Amore in Salt Lake and they have the best hazelnut gelato ever. I found this recipe for hazelnut ice cream- which was really good- but not as good as their gelato. The people who own the restaurant are also Italian, so unless I can get my hands on their recipe, I might have to call it good with this. It was creamy and has good flavor, but I will probably add hazelnut liquer next time for a deeper flavor. It gets a 7.5 and the recipe came from themessybaker.com. I accidentally bought chopped, roasted hazelnuts, so cut down the roasting time in the oven to 4 minutes. I wasn't able to get the skins off, but they came off anyway when I strained it all out.  1 1/2 cup  hazelnuts 2 cups  heavy cream 1 cup  whole milk 3/4 cups  sugar I used 2/3 C. 1/4 teaspoon  fine sea salt 4  large egg yolks 1 tablespoon  hazelnut liqueur (optional) https://themessybaker.com/2013/06/16/hazelnut-gelato-for-fathers-day/

One Pan Tandoori Chicken with Spiced Coconut Rice

Image
I really liked this. I know I'm a sucker for Indian food, but this has great flavor and even my kids and one of their friends liked it, so it was a winner. I give it a 7.5 and the recipe came from ambitious kitchen.com. You could easily add more vegetables to this (carrots, cauliflower, broccoli, etc.) to make it healthier. For the marinade: 1 ½   pounds   boneless skinless chicken thighs 1   teaspoon   coriander 1   teaspoon   cumin 1   teaspoon   paprika 1   teaspoon   ground turmeric 1   teaspoon   cayenne pepper I left this out ½   tablespoon   garam masala 3/4   cup   nonfat plain greek yogurt Juice of 1 small lemon 3   garlic cloves, minced 1   tablespoon   freshly grated ginger ¾   teaspoon   salt Freshly ground black pepper For the dish: 1   tablespoon   olive oil or coconut oil 1   (15 ounce) can lite coconut milk ½   teaspoon   red pepper flakes I left this out 1/2   teaspoon   turmeric 1/2   teaspoon   cumin ⅛   teaspoon   coriander 1/2   teaspoon   salt Freshly ground

Buckeye Brownies

So, these were good and I would make them again. My one complaint is that brownies weren't fudgy, so I would adjust that part for sure. The recipe came from halfbakedharvest.com, and it's definitely good. You essentially mix the eggs, add the oil and the sugar and the vanilla, then add the dry ingredients. Don't over mix, and put in an 8x8 pan and bake at 350 for like 12-15 minutes. You cool this mostly, and then I put the peanut butter mixture over. You melt the chocolate in the microwave, let it sit for 5 minutes, pour it over the top and put it in the fridge for 10 minutes. You cut them, put them back in the fridge to set for another 30 minutes. The recipe came from halfbakedharvest.com Ingredients   ·          ▢ 2  eggs, at room temperature ·          ▢ 1/2 cup  melted coconut oil   I did olive oil instead, and next time I would do half oil half butter ·          ▢ 1/3 cup  pure maple syrup   I did sugar ·          ▢ 2 teaspoons  vanilla extract ·          ▢
