Chocolate Orange Swirl Muffins

  I really liked these, but I also love orange and chocolate together. You could probably cut down the sugar even more than I did since I didn't cut out too much. They were the teeniest bit stodgy, but I may have over-mixed them a bit. They get a 7.5 and the recipe came from melskitchencafe.com.   1 ½ cups all purpose flour  ½ cup sugar I used 1/3 C sugar  2 teaspoons baking powder  ¼ teaspoon salt  1 egg  ½ cup olive oil or melted butter  ½ cup buttermilk  ½ cup orange juice  1 teaspoon vanilla extract  Zest of one medium orange (about 1 tablespoon)  2 tablespoons cocoa powder  ½ cup semisweet chocolate chips, regular or mini-sized https://www.melskitchencafe.com/chocolate-orange-swirl-muffins-sugar-rush-9/

Chicken Caesar Salad

So, I love Caesar salad. It feels healthy, but it's not, but it is all about what you think about your dinner in terms of how healthy it is that really determines how you good you feel. I like this a lot--I give it an 8. Chicken Caesar Salad 3 heads Romaine lettuce 1 bag Caesar salad croutons or homemade (I was lazy tonight, I admit) freshly grated parmesan cheese 2 grilled chicken breasts Mix with the following dressing and then serve immediately:  Dressing 1/4 cup mayo 1/8 tsp. kosher salt few grinds black pepper 1 tsp. white vinegar 2 large garlic cloves 2 tsp. Worcestershire sauce 1 1/2 T. fresh lemon juice 1 Tbs. dijon mustard 1/2 cup olive oil So, you put everything in a blender except the oil (mince your garlic first, the blender won't do it). Then, you slowly stream in the oil. Magic!
