Prosciutto and Cheese-Wrapped Asparagus

 


I made this as a side dish on Christmas Eve and really liked it. I swapped out the feta for smoked gouda but still sprinkled feta on it after it baked. So the cheese is pretty versatile, and blue cheese would be really good as well. I give this an 8 and got it from styleatacertainage.com. 

1 Bundle Fresh Asparagus Spears (about 30 spears)

½  of an 8-oz. Package Block Feta, plus more for crumbled garnish

1 ½ packages of Prosciutto di Parma (10 slices) I used 1 package and just cut the slices in half

Olive Oil

¼ cup Raw Pistachio Nut Meats, chopped fine

½ tsp. Dried Thyme

½ tsp. Crushed Red Pepper Flakes I didn't add this

Balsamic Glaze
