No Bake Pumpkin Oatmeal Energy Bites
I was initially hesitant to combine peanut butter and pumpkin, but they actually worked well together. I ground 1 C. of the oatmeal in the food processor before-hand so they had a smoother texture. They get a 7 and the recipe came from clessthismessplease.com.
- 1 1/2 to 2 cups dry, uncooked oatmeal I used 1 1/2 C.
- 1/2 cup all-natural peanut butter or other nut or sun butter
- 1/2 cup pumpkin puree
- 1/4 cup chia seeds I didn't add these because I didn't have any on hand
- 1/4 cup quality honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon or pumpkin pie spice
- 1/2 cup mini dark chocolate chips
- 1 TBS flaxseed
