Coffee Cream Bars

These were good, but would benefit from a few changes. I doubled this, so had to guess on the baking time. I should have increased the baking time for the graham cracker crust, since it got a bit soggy when it was all assembled. The other parts were good, but I would probably cut down on the amount of chocolate topping. The recipe gets a 7.5, and the recipe came from macheesmo.com. Pumpkin Snickerdoodles

So I have never liked snickerdoodles, even as a kid, because they never had much flavor. I made these at the request of a friend, and tried them agin to see if my adult taste buds liked them better, but they were still blah. If you like snickerdoodles, you will probably like these. Meatball Oven Stew

So, this is such a Mormon meal. This is a meal from John’s childhood, and I am posting it here because I updated it and used the pressure cooker and it’s awesomely easy. This meal is very basic, an easy weeknight meal, but not fancy enough for company. It’s one of those embarrassing meals I make, but I’m putting it out there. Twice a year, we eat this. And we like it well enough. And it’s probably a 6, but it’s familiar so we keep it in the rotation. It's good with green peas. No judging. First, you combine the following to make meatballs: ground turkey or beef, a lb. or so 2-3 tsp. dry mustard 2 –4 Tbs. chopped onion 2-4 Tbs. chopped green pepper 1 tsp. chili powder 1 slightly beaten egg 1 tsp. salt 1/2 tsp-1 tsp. Spicy shrimp

This meal was super easy, and the kids loved it. I thought they were fine, like maybe a 6.5, but have potential. The biggest thing is to fully defrost and drain the frozen shrimp if you don’t use fresh. Otherwise they get too wet in the oven and don't properly caramelize. I baked these at 400 for about 6 minutes. Before I added them to the oven, I seasoned them with: Dry parsley, crushed red pepper flakes, smoked paprika, 4-5 cloves fresh garlic, butter, salt, pepper, and lemon juice to finish.

Rosemary Chicken with Sweet and Sour Marmalade

Don't judge by the photo - this looks like shit. But it tastes amazing. So, this recipe comes from Fine Cooking and I've had it forever. I can't believe I waited this long to try it. I give it a 9 because it explodes with flavor, it's easy to make, and it's unique. I've made it THREE times since trying this recipe during the summer. I paired it with mushroom risotto, pesto, and black bean salad. If you want a flavorful recipe, you've got it. (I can't figure out why the first pic is massive ... sorry, guys) 1 Tbs. plus 1 tsp. of minced fresh rosemary  2 tsp. dark brown sugar  2 tsp. kosher salt  1 tsp. ground black pepper  1 tsp. crushed red pepper flakes (don't skimp on this) 2 Tbs. vegetable oil 2 1⁄2 lb. chicken (If you don't have this much chicken, then cut the spice amounts in half. Cinnamon Roll Cake

Everyone liked this and gave it a 9. I thought it was fine. More like an 8 at most. We found this on pinterest for Bennett’s birthday. So, the cake recipe looked suspect, so I used the white cake from fresh strawberry cake and then added 1 tsp. cinnamon. I baked it in 3 8-inch pans. The glaze was 50% brown sugar (about 6 Tbs), 6 Tbs. powdered sugar, 1 Tbs. cinnamon, and a few Tbs. of water. You stir this together and brush it on the layers. You then put frosting on the opposite side of the cake going on top of it. Frosting: cream cheese frosting (2 cubes butter, 1 block cream cheese, 1 tsp. vanilla, 5 cups powdered sugar, and 3/4 tsp. cinnamon).
