Coconut Raspberry Scones

  These were good, and I would make them again. I give them an 8. INGREDIENTS 2 1/2 cups all-purpose flour 1/2 cup granulated sugar 1 tablespoon baking powder 1/4 teaspoon kosher salt 1/2 cup cold butter, cut into small pieces I did 6 T of butter and 2 T. of coconut oil 2 large eggs 3/4 cup coconut cream (see notes below), plus 2 tablespoons for brushing the scones I did buttermilk and added 1/2 tsp. coconut extract instead 1 cup raspberries (frozen works well here) I probably increased this a bit 1/2 cup shredded coconut 2 teaspoons sugar I topped mine with coconut instead 1/2 teaspoon ground cinnamon  see note above Essentially, you mix the dry, cut in the butter, add the wet and barely mix. I might decrease the liquid a slight bit, and I will add the coconut and raspberries before the liquid next time. Traditional Coleslaw dressing, version 2

I didn’t take a picture of this, but it was fantastic, so use your imagination. So, this is the best version I have found, and I am done looking. I combined the recipe I got from UVU’s Restaurant Forte with another one online, and this one is great:   1/2 cup mayo 1/4 cup sour cream 1 Tbs. of white vinegar 1 Tbs. of sugar (scant) juice from 1/2 lemon (probably 1 Tbs. at least) 1 clove garlic 1/2 tsp. salt   I also added about 1 Tbs. of minced onion to the coleslaw, and that’s a winner as well.

Pumpkin Oatmeal Chocolate Chip Cookies

These were good and get a 7. The recipe came from littledairyontheprairie.com. Moist Gingerbread Spice Cake

This was really good and gets an 8.5. This was really moist and had great flavor. I added more spice, which I've noted below. The recipe came from sallysbakingaddiction.com. This was meh and gets a 5. It was a bit sour and not nearly sweet enough, so maybe increasing the honey would help (I only used 2 TBS). Slow Cooker Basil Chicken in Coconut Curry Sauce

So this picture is horrific, but this dish was actually good. It gets a 7 and the recipe came from thefoodcharlatan.com. Stout and Cheddar Meatloaf

Jared made this and it had great flavor. The only downside is that this was super greasy, but it was otherwise great. It gets a 7 and the recipe came from Fine Cooking. 2 Tbs. plus 1 tsp. canola or olive oil 1 medium yellow onion, chopped 1/2 cup small-diced carrots 1/2 cup small-diced celery 2 large cloves garlic, finely chopped 3/4 cup stout beer, such as Guinness 4 oz. medium-coarse white bread, such as Italian or French, cut into 2-inch pieces (about 2-1/2 cups) 1 cup whole milk 1 lb. ground beef 1 lb. ground veal He left this out 2 large eggs 1/2 cup grated Cheddar 1/4 cup dried mushrooms, rehydrated in hot water and chopped  He left these out 1/4 cup chopped fresh parsley 1 Tbs.
