Loaded baked potato and chicken casserole—Dutch Oven style

The Ballards in my ward made this awesome meal for an enrichment activity, and it was very tasty. It gets an 8-8.5. Here is the recipe they used:

3-4 medium russet potatoes, cubed

1 lb. chicken, diced

4 slices bacon, cut small

1 1/2 cups shredded cheddar cheese

4 green onions, green part too

1/2 tsp. salt

pepper to taste

1/2 cup heavy cream

2 T. butter

Layer in Dutch oven. Potatoes, chicken, bacon, cheese, green onions, and alternate. Pour cream over top and dot with butter. Bake at 350 until it’s done. It probably would take 1 1/2hours. Oh, and in the version I tried, he added a can of cream of chicken soup as well.

  1. So, cream of cheddar is good in this, and I think smoked gouda would be awesome as well. Put the bacon on the bottom and top of the dutch oven, and it cooks it up crispier and then you can just break it up. I add sour cream to mine, as well as Lawry's seasoned salt. Dad has added Jarlsberg cheese, and says that's really good. And, it takes almost 5 lbs. of potatoes per oven. Finally, for the cheddar cheese, I cut it in big squares.

  2. So, I put a normal full onion as well on top of the bacon at the bottom and Jarlsberg cheese is really good. Frozen corn stirred in is also good, and I used just buttermilk today (1/2 cup) with 1 can of cream of chicken and 1 can of cream of cheddar and it was great. Beer would be very awesome. You could really almost do 6 lbs. of potatoes per oven.

  3. I did 6 carrots, 6 red potatoes, 2 onions, 6 chicken thighs, and some frozen green beans, and that perfectly filled out oven. We did 2 cream of (cheddar and chicken), 1 can filled up with beer, a large scoop of sour cream, and about 1 cup of large cubed swiss, pepper jack, and colby jack cheese. Tons of lawry's and pepper, and we layered a few strips of pre-cooked bacon over the onion in the bottom of the pan, yum.
