Lasagna Soup

I like this b/c I can food prep it easily. I make the meatballs in batches each 6 months, and they are essentially just 1/3 each of ground beef, ground turkey, and hot sausage. One bag is probably 1 pound of meat. My kids thought this needed more noodles, but I was just glad to have a warm meal, so I guess expectations change as you get older, haha. Sauté the following:  1 onion 1 small package of mushrooms Add: 6 cups chicken broth 2 T. tomato paste 1 jar. Trader Joe's vodka sauce 14 oz. crushed tomatoes 1 dozen meatballs, chopped into small bits 1 T. garlic powder 3/4 tsp. crushed red pepper 1 T. dry basil 1 t. salt 1 t. dry parsley 1 t. dry oregano 10 lasagna noodles, broken into 4 pieces When the noodles are almost done, add: 4 cups spinach Boil until soft, about 20 minutes, then garnish with cottage cheese and mozzarella cheese

Honey Whipped Feta with Garlic Herb Roasted Olives

  This is a keeper. I really loved the flavor combo, and the honey mellowed out the sharpness of the feta. It gets an 8.5 and came from halfbakedharvest.com. You can serve it with crackers or bread.  2   cups   mixed olives pitted ▢  1/3   cup  extra virgin olive oil  ▢  6   cloves   garlic, smashed ▢  1   shallot, quartered  I used 1/4 onion ▢  1   lemon, quartered ▢  2   sprigs   fresh thyme ▢  2   sprigs   fresh oregano ▢  chili flakes   I left these out HONEY WHIPPED FETA ▢  1  cup (8 ounces)  crumbled feta cheese ▢  3   ounces   cream cheese, at room temperature ▢  2-3   tablespoons   honey ▢  black pepper

Jamaican Rice

This was awesome. Sourdough Irish Soda Bread

  I've always wanted to make Irish soda bread, and finally made it with Irish beef stew for St. Patrick's Day. Yes, I'm behind on my posting. Sad times. Anyway, this was fine. It basically tasted like a big biscuit, which is fine, but I prefer angel biscuits if I"m going to have a biscuit. Mediteranean Chicken

  I had to find a lot of healthy meals when Jared did his elimination diet last month, and this was a good one. I didn't serve it with rice or quinoa, but I'm sure it would be good with lemon rice. Chickpea Salad with Grilled Vegetables

  I probably should have positioned the sourdough differently, but oh well. This had really lovely flavor and was light and healthy. I used zucchini instead of eggplant, so you could easily use different vegetables. I give it a 7.5. It came from lazycatkitchen.com.
