Pear and Gorgonzola Salad
This is a good winter salad and everyone seemed to like it. You could swap out the pear for apple or the gorgonzola for blue cheese, so it's nice and versatile. I give it an 8 and the recipe came from afoodloverskitchen.com
For the salad dressing
- 3 tablespoons olive oil
 - 1 1/2 tablespoon apple cider vinegar
 - 1/2 teaspoon honey or agave
 - 1/2 teaspoon Dijon mustard
 - 1/4 teaspoon oregano
 - salt and pepper to taste
 - Squeeze of lemon juice
 
For the salad
- 3 cups wild lettuce mix or arugula
 - 1 pear diced
 - 3 tablespoons crumbled gorgonzola or blue cheese I used blue cheese
 - 2 tablespoons chopped walnuts lightly toasted
 - 2 tablespoons dried cranberries roughly chopped I didn't add these
