Pear and Gorgonzola Salad

 


This is a good winter salad and everyone seemed to like it. You could swap out the pear for apple or the gorgonzola for blue cheese, so it's nice and versatile. I give it an 8 and the recipe came from afoodloverskitchen.com

For the salad dressing

  • 3 tablespoons olive oil
  • 1 1/2 tablespoon apple cider vinegar
  • 1/2 teaspoon honey or agave
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon oregano
  • salt and pepper to taste
  • Squeeze of lemon juice

For the salad 

  • 3 cups wild lettuce mix or arugula
  • 1 pear diced
  • 3 tablespoons crumbled gorgonzola or blue cheese I used blue cheese
  • 2 tablespoons chopped walnuts lightly toasted
  • 2 tablespoons dried cranberries roughly chopped I didn't add these
