Cornbread with Cinnamon Pecan Honey Butter

 


This was the cornbread we were raised with, and it's just a good traditional recipe that everyone likes. I made up the honey butter recipe for the top, and it's a winner. I honestly have no idea where my parents got this recipe.

1/2 cup butter                                                              2 eggs

1/2 tsp. soda                                                                1 cup cornmeal

1/2 cup sugar                                                               1 cup buttermilk

1/2 tsp. salt                                                                  1 cup flour

Mix dry, add wet, and do not overmix. Bake at 375 for 30 minutes. 

Honey Butter

1/3 C honey

1/4-1/2 tsp cinnamon

1-2 TBS butter

1/2 C chopped pecans 

Melt honey and butter on the stove under medium-low heat. Stir in cinnamon and chopped pecans and drizzle over the top of the cornbread.
