Lasagna Soup

I like this b/c I can food prep it easily. I make the meatballs in batches each 6 months, and they are essentially just 1/3 each of ground beef, ground turkey, and hot sausage. One bag is probably 1 pound of meat. My kids thought this needed more noodles, but I was just glad to have a warm meal, so I guess expectations change as you get older, haha.


Sauté the following:

 1 onion

1 small package of mushrooms

Add:


6 cups chicken broth

2 T. tomato paste

1 jar. Trader Joe's vodka sauce

14 oz. crushed tomatoes

1 dozen meatballs, chopped into small bits

1 T. garlic powder

3/4 tsp. crushed red pepper

1 T. dry basil

1 t. salt

1 t. dry parsley

1 t. dry oregano

10 lasagna noodles, broken into 4 pieces


When the noodles are almost done, add:


4 cups spinach


Boil until soft, about 20 minutes, then garnish with cottage cheese and mozzarella cheese
