Chicken Caesar Salad
So, I love Caesar salad. It feels healthy, but it's not, but it is all about what you think about your dinner in terms of how healthy it is that really determines how you good you feel. I like this a lot--I give it an 8.
Chicken Caesar Salad
3 heads Romaine lettuce
1 bag Caesar salad croutons or homemade (I was lazy tonight, I admit)
freshly grated parmesan cheese
2 grilled chicken breasts
Mix with the following dressing and then serve immediately:
Dressing
1/4 cup mayo
1/8 tsp. kosher salt
few grinds black pepper
1 tsp. white vinegar
2 large garlic cloves
2 tsp. Worcestershire sauce
1 1/2 T. fresh lemon juice
1 Tbs. dijon mustard
1/2 cup olive oil
So, you put everything in a blender except the oil (mince your garlic first, the blender won't do it). Then, you slowly stream in the oil. Magic!
So homemade croutons take this over the top, and the salad gets warm from the chicken, so cool it completely and maybe refrigerate the bowls.
ReplyDeleteWe did a double recipe for us and John's parents with a full batch of croutons and we finished it all and had about 1 cup of extra dressing.
